Date and Currant Muffins

Ingredients

  • 1 cup whole wheat flour
  • 1 cup All-Bran cereal, crumbled
  • 1/4 cup flax seeds
  • 1/2 cup dried currants
  • 12 dates, chopped
  • 1/2 cup plain unsweetened applesauce
  • 3/4 cup soy milk (vanilla is good)
  • 1 tsp baking powder

Preparation

Step 1

Recipe did not include baking temperature. 350 F a fair guess. Adjust as needed.

Combine all ingredients in large bowl. Spoon into cooking-sprayed muffin pans. Bake for about 20 minutes or until it survives the toothpick test.
