Soup/Gazpacho

Ingredients

  • 1/2 cup olive oil
  • 4 tbsp lemon
  • 6 cup tomato juice
  • 2 cups beef broth
  • 1/2 cup finely minced onion
  • 2 tomatoes, peeled and cubed
  • 2 cups fine;y minced celery
  • 1/4 tsp tabasco sauce
  • 2 tsp salt
  • 1/2 tsp pepper
  • 2 green peppers, finely chopped
  • 2 cucumbers, diced
  • croutons

Preparation

Step 1

Beat together the oil and lemon juice. Stir in tomato juice, broth, onion, tomatoes, celery, tabasco sauce, salt and pepper. Taste for seasoning. Chill for at least 3 hours.
