- 3 medium-size peaches, peeled and halved
- 3 cups yogurt
- Honey-Raspberry Sauce
- Honey-Raspberry Sauce:
- 2 cups fresh or frozen raspberries
- 3 tbsp honey
- 2 tsp cornstarch
- 1/4 cup water

Peach Melba:
Place peach halves in dessert dishes, parfait glasses, or large goblets. Top each with 1/2 cup yogurt. Spoon about 1/4 cup Honey-Raspberry Sauce over each serving. Serve immediately.
Honey-Raspberry Sauce:
In a small saucepan, combine berries and honey. Cook over low heat, stirring constantly, until just below boiling. Remove from heat.
In a small bowl, mix cornstarch and water until smooth; add to the berry-honey mixture. Stirring constantly, cook over low heat until thick and smooth, 5 to 7 minutes.
Strain sauce through a coarse siever; cool. Place in a container, cover, and store in the refrigerator.
This sauce makes a delicious topping for yogurt, cheesecake, pancakes, and dessert crepes.
