Smoked-Turkey Sandwiches with Arugula Mayonnaise

Ingredients

  • 2/3 cup mayonnaise
  • 1/2 cup (packed) coarsely chopped arugula leaves plus 40 whole arugula leaves (about 5 large bunches total)
  • 4 tsp. minced shallots
  • 4 tsp. chopped fresh parsley
  • 1/2 tsp. (generous) grated lemon peel
  • 16 thin slices firm white sandwich bread, crusts trimmed
  • 14 ounces thinly sliced smoked turkey

Preparation

Step 1

Mix mayonnaise, chopped arugula, shallots, parsley and lemon peel in small bowl. Season with salt and pepper.
Place bread slices on work surface. Spread mayonnaise mixture over each slice, dividing equally. Top 8 bread slices with turkey, dividing equally. Place 5 arugula leaves atop turkey on each. Top with remaining 8 bread slices, mayonnaise side down, pressing gently to adhere. Cut each sandwich diagonally into quarters.
