Ingredients

  • 3 C. sugar
  • 1 C. oil
  • 4 eggs
  • 2 C. sweet potatoes, cooked and mashed
  • 1 tsp. ground cloves
  • 1 1/2 tsp. allspice
  • 1 1/2 tsp. cinnamon
  • 3 1/2 C. all-purpose flour
  • 1/2 tsp. baking powder
  • 2 tsp. baking soda
  • 1 tsp. salt
  • 2/3 C. water
  • 1 1/2 C. golden raisins
  • 1 1/2 C. chopped pecans
  • 8 wide-mouth, 1 pint jars
  • shortening (to grease jars)

Preparation

Step 1

1. Thoroughly wash and rinse 8 wide-mouth, one pint jars in hot water; let dry. Grease inside of jars with shortening; set aside. Fill a saucepan with water, bring to a boil, then turn off heat. When water is no longer boiling, add jar lids and rings; leave in hot water until ready to use.

2. Using a heavy-duty mixer, blend sugar and oil; add eggs. Beat well, then add mashed potatoes and water; set aside.

3. Sift together flour, salt, baking powder, baking soda, cinnamon, cloves and allspice; add to sweet potato mixture. Continue to mix on low speed until well blended; fold in raisins and pecans.

4. Pour one cup plus one tablespoon batter into each jar; repeat with remaining batter.

5. Place filled jars on a baking sheet and bake at 325 degrees for 55 minutes or until centers test done.

6. If bread has risen above the jar's top, cut off excess. Wipe edge of each jar clean, add lid, tighten down with ring and set aside. As jars cool, you will hear them "ping" as the lids seal. Once all jars have sealed, turn them upside down to cool completely.
