Banana Coconut Leather

Ingredients

  • 6 medium bananas
  • 1/4 cup lemon juice
  • 2 tbsp sugar
  • 1/2 cup flaked coconut
  • Saran wrap

Preparation

Step 1

Peel and slice bananas to measure about 1 quart. Combine with lemon juice and sugar in blender jar and blend until smooth. Stir in coconut. Line 2 pans (10-by-15-by-1-inch) with saran or heavy plastic bag cut open. Turn half the mixture into each pan. Spread evenly. Place in gas oven with pilot light, and let stand 24 hours. Remove from oven and check drying. If leather is dry enough to form a sheet that can be lifted, gently peel leather off plastic, and turn over. Return to oven until no moist spots remain, about a half day. Peel off when dry and roll up. Wrap in saran wrap to store.
