Banana Chips (Dehydrator)

Choose bananas that have brown spots on the skin. The brown spots tell me that the sugars inside the banana have developed and the dried product will taste sweeter. It is important to remember that natural sugars act as a preservative. When foods contain a lot of natural sugar they do not need to be dried until they are hard. They tend to be a bit sticky. To check to see if the banana is dry: take a piece off the drying tray, cool and then feel to make sure there are no pockets of moisture. When dried, ripe banana chips are a little sticky and pliable. If the bananas are completely black, then I puree the banana in the blender, add a little cinnamon, and dry into a banana leather.
