Apple-Raisin Stuffing

Ingredients

  • 1/3 cup minced onion
  • 3/4 cup chopped celery
  • 1/4 cup oil
  • 4 cups soft bread cubes (I use whole wheat bread)
  • 1 1/2 cups chopped apple
  • 1/3 cup raisins
  • 1 cup vegetable broth
  • Salt, to taste
  • Pepper, to taste

Preparation

Step 1

In large skillet, heat oil and add onion and celery. Cook until tender about 5 to 7 minutes. Pour into a casserole and add bread cubes. Add remaining ingredients and toss, making sure all the bread is soaked in broth. Bake in oven about 45 minutes at 350 F.
