Ingredients
- 1 1/2 cups water
- 2 large lemons
- 1 cup grated ginger
- 1 1/4 cups sugar

Preparation
Step 1
•Bring the water to a boil.
•Add the sugar, ginger and grated lemon zest.
•Cook for 15 minutes and stir occasionally.
•Remove from heat and stir in the juice of 2 lemons.
•Strain through a fine sieve, pressing hard on the solids to extract all the liquid.
•Let cool and fill into little bottles or jars.
•Keep chilled in the fridge.
•NOTES: The syrup keeps for about 1–2 weeks when stored in a fridge. Make a hot or cold drink with one part syrup to 4–5 parts water.
