Sage and Prosciutto Popovers

Ingredients

  • Makes 18 cupcake sized popovers or 12 large popovers
  • 1 1/2 cup flour
  • 1 1/2 cup milk
  • 4 eggs
  • 1 1/2 tsp salt
  • 2 Tbs butter
  • 3 oz prosciutto, chopped into small chunks
  • 3-4 Tbs minced fresh sage leaves (or 1 Tbs dried sage)

Preparation

Step 1

Preheat oven to 400 degrees.


Combine flour, milk, salt, eggs and butter. Stir till just combined. Refrigerate batter.

Add a small pat of butter, sage and prosciutto to each cup of a 12 cup popover pan (or 18 portions of a cupcake pan), and place in oven until butter just starts to sizzle. Remove pan from oven and fill each cup 2/3 of the way up as quickly as possible.

Bake for 40 minutes.


Quickly pierce the top of each popover with a fork to allow steam to escape.
