Ingredients

  • 1 Tblsp olive/canola oil
  • 1 large onion - chopped
  • 2 cloves garlic - crushed or chopped
  • 1 pkg baby carrots - chopped
  • @ 6 stalks celery - chopped
  • 1 bay leaf
  • 2 cans diced tomatoes
  • 3 to 4 cans of chicken broth
  • 1 to 2 cups shredded cooked chicken
  • 1 pkg wide egg noodles - cooked
  • To Taste: salt, black pepper, celery seed, basil

Preparation

Step 1

1) Heat olive oil in Dutch oven over medium-high heat. Add onion and garlic and saute until soft (3-6 minutes). Add carrots, celery, bay leaf and saute a few minutes more until crisp tender.

2) Add broth, cover and bring to a boil. Stir in tomatoes, reduce heat and simmer for about 1 hour

3) Add chicken

4) Bring back to a boil and stir in noodles - low boil until heated andready to serve
