Richie's Chipotle Chile Sauce

Ingredients

  • 2 C white Vinegar
  • 3/4 C Seasoned Rice vinegar
  • 3 C Water
  • Total of 5 oz. of dried Chiles
  • 1 oz. Chile de Arbol
  • 1 oz. Chile Morita
  • 2 oz. Chipotle
  • 1 oz. Serrano
  • 3 cloves garlic
  • 2 slices onion
  • 1 1/2 t salt
  • sugar to taste?
  • later added 1 C water and 1C mixed vinegar

Preparation

Step 1

Add water garlic, onion and Chiles to pan and simmer 15 min,
Add Vinegar and salt and simmer 10 min,
Blend in blender till liquefied
using a fine mesh strainer strain in to large bowl, then ladle and funnel into sterilized jars.
