Citrus Chicken

Ingredients

  • 1 orange
  • 1 Tbsp chopped fresh rosemary
  • 1 tsp extra-virgin olive oil
  • 1 tsp paprika
  • 1/2 tsp garlic salt
  • 1/4 tsp freshly ground pepper
  • 6 (1/2-lb) skinless, boneless chicken thighs

Step 1

1. Preheat the oven to 350 degrees. Peel off the orange zest with a zester, making sure to avoid the bitter white pith underneath; set aside. Trim off the remaining orange rind with a knife and discard. Cut the orange into 8 wedges.

2. Combine the rosemary, orange zest, oil, paprika, garlic, salt, and pepper in a small bowl. Rub the orange mixture all over the chicken. Transfer to a roasting pan and scatter the orange wedges around the chicken. Roast until the chicken is cooked through, about 45 minutes.
