Scallops & Grits by Bill Russ

Ingredients

  • Scallops
  • Grits
  • Orange juice, low acid
  • butter
  • parsley
  • olive oil
  • flour

Preparation

Step 1

Sauce
Make a slurry using flour or other thickening agent and water
Add 1 cup low acid orange juice
Bring to boil and lower heat until orange juice reduces by half
cool

Grits
Cook according to package, using chicken broth instead of water
Add corn last minute to grits
And parsley once grits are removed from heat

Scallops
Heat pan, then add olive oil
Roll scallops in salt
Cook on High, placing scallops in oil once hot
Flip after 5 minutes
