Seared Sea Scallops with Corn and Smoked Ham

Ingredients
- 1 1/2 lbs. sea scallops
- 1 tsp salt, divided
- 1/2 tsp pepper, divided
- 2 tbsps canola oil
- 2 cups corn
- 1 cup chopped ham
- 1 tbsp lemon juice
- 2 tbsps butter
- 2 tbsps sliced chives
- steamed green beans

Preparation
Step 1
Rinse scallops, and pat dry.
Sprinkle scallops with 3/4 tsp salt and 1/4 tsp pepper.
In a large skillet, heat oil over med. heat. Add scallops, cook for 1 1/2 minutes on each side until golden brown.
Remove from skillet and keep warm.
Add corn and ham to skillet, cook for 2 minutes. Stir in remaining salt and pepper, and lemon juice, cook for 1 minute. Add butter, cook for 1 minute or until butter melts.Serve corn mixture with scallops, sprinkle with chives. Serve with green beans.
