Penne with Chorizo and Basil

Ingredients

  • 1 package penne
  • 2 TBSP ev olive oil
  • 1 lb. chorizo sausage
  • 1 small red onion
  • 4 cloves garlic minced
  • 1 cup grape or cherry tomatoes halved
  • 1/2 cup chicken stock
  • 2 TBSP butter chilled
  • 1/2 cup chopped fresh basil
  • Course salt and freshly ground pepper
  • 3 ounces parmesan cheese shaved

Preparation

Step 1

In pot of boiling salted water, cook pasta until tender but firm to bite. Drain and return to pot.

Meanwhile, heat olive oil in skillet over medium. Add chorizo and cook until lightly brown about 5 min. Add onion snd tomatoes and cook 3 min. Stir in chicken stock and cook for 3 min. Add drained pasta and cook for another 4 min or until pasta absorbs sauce. Mix in butter and basil toss well. Season with salt and pepper. Sprinkle with parmesan and serve immediately.
