Bran Muffins (Moms)

Refrigerator Muffins…store for up to 2 weeks and bake fresh each day.

Ingredients

  • 2 cups Nabisco Bran Cereal
  • 2 cups Boiling water
  • 4 cups Bran
  • 1 quart buttermilk
  • 1 cup butter
  • 3 cups white sugar
  • 4 eggs
  • 1 tsp salt
  • 5 cups flour
  • 5 tsp baking soda

Preparation

Step 1

Pour water over Bran cereal and let cool. Add bran and buttermilk to first mixture. Cream butter, sugar, eggs, and salt. Add to bran mixture. Add flour and baking soda.

Fill muffin tins 3/4 full. Store remainder in fridge up to 2 weeks.
