Stuffed Green Peppers

Ingredients

  • 2-3 large green peppers
  • 3/4 lb. ground beef (or pork, turkey)
  • 1/3 C. chopped onion
  • 7 1/2 oz. can Rotel
  • 1/2 C. water
  • 1/3 C. long grain rice
  • 1 T. Worcestershire sauce
  • 1/2 tsp dried basil or oregano
  • 1/2 C. shredded cheddar cheese

Preparation

Step 1

Halve and deseed peppers. Immerse in boiling water for 3 minutes. Invert on paper towels and drain well.

Cook meat and onion. Drain fat. Stir in tomatoes, water, uncooked rice worcestershire sauce, basil/oregano. Bring to boil. Reduce heat, simmer-covered for 15-18 minutes or until rice is tender. Stir in 1/4 C. cheese.

Fill peppers with meat mixture. Top with remaining meat mixture.

Bake at 375 for 15 minutes or till heated through. Sprinkle with remaining cheese.
