Berry, Berry Bars

"From a simple cookie recipe, I kept adding to until this which is a great healthy snack for my children, or it can be served warm with whipped topping for the ladies luncheon."

Ingredients

  • 1/2 cup butter or margarine, softened
  • 3/4 cup firmly packed brown sugar
  • 1/2 cup all-purpose flour
  • 1 1/2 cups quick oats
  • 3/4 cup shredded coconut
  • 1 cup blackberries
  • 1 cup strawberries, halved
  • 1 tsp ground cinnamon, optional

Preparation

Step 1

Heat oven to 375 F. Spray no stick corn oil cooking spray into an 8-inch square pan.

Beat together butter, brown sugar, oats, flour and coconut. Press all but 1 cup into pan.

Mix berries (is using cinnamon, mix with berries now) and spread across pressed mixture. Gently pat down top.

Sprinkle rest of mixture over top of berries. Bake for 20 minutes, or till edges are slightly browned. Let cool completely, then cut.
