Light Brainy Brownies

Ingredients

  • 3 tbsp unsalted butter
  • 1/2 cup semi sweet choco chips
  • 2 large eggs
  • 1/4 cup vanilla yogurt
  • 2 tsp pure vanilla extract
  • 1/2 cup sugar
  • 3/4 cup purple puree
  • 1/4 tsp cinnamon
  • 1 tsp instant coffee powder
  • 1/4 cup unsweetened cocoa
  • 1/4 tsp salt
  • 1/2 cup flour blend
  • 1/4 cup oat bran
  • 1/2 tsp baking powder
  • powdered sugar for dusting

Preparation

Step 1

Preheat oven to 350.

Butter or spray, then lightly flour the bottom of a 9 inch square baking pan.

Melt the butter and chocolate chips in a double boiler or metal bowl over simmering water (or in a microwave). Remove from heat and allow mix to cool a bit. Meanwhile in another bowl, whisk together the eggs, yogurt, vanilla, sugar, and Purple puree.

Combine the purple egg mixture with the cooled chocolate mixture.

In a mixing bowl, whisk together cinnamon, coffee, cocoa, salt, flour blend, oat bran, and baking powder. Add this to the chocolate mix and blend thoroughly. POur the entire mix into baking pan.

Bake for 26-40 minutes, until toothpick inserted comes out clean. Allow to cool completely in the pan before cutting the brownies using a plastic or butter knife. Dust with powdered sugar, if desired.
