Ingredients
- 3/4 c kosher salt
- 1/2 c brown sugar
- 1 gallon water
- spices to taste

Step 1
Add salt and sugar to water ( easier to mix if boil in some water then add to rest of water). Add spices:
rosemary, thyme. pepper, lemon if desired. Cool. Depending on poundage of meat, marinate 12-24 hours. Small amount of meat (loin or chicken put in brine about 1 hour. Rinse with cool water after removing from brine.
