Ingredients
- 1 1/2 cups black beans, rinsed and soaked
- 1/2 clove garlic, gently crushed
- 1 onion, finely chopped
- 1 tsp chili powder
- Salt
- Cayenne pepper
- Vegetable stock or broth
- 2 cups cooked rice
- Sour cream, optional
Preparation
Step 1
Cover soaked beans with fresh water and boil gently until just tender. Drain. Add garlic and onion. Season with chili powder, salt and cayenne to taste. Add enough stock or broth to cover beans, and simmer slowly until the beans fall apart a little and make a thick, rich sauce. Pour over mounds of warm, cooked rice. Seasoning is typically hot. Garnish with sour cream, if desired.
