Chicken Parmesan

Ingredients

  • 2 eggs beaten
  • 1 cup grated parmesan cheese
  • 7 oz. seasoned panko bread crumbs
  • 6 skinless, boneless chicken halves
  • 1 Tbsp. vegetable oil
  • 12 oz. pasta sauce
  • 6 slices Monterey jack cheese

Preparation

Step 1

Preheat oven to 375. Pour beaten eggs into a shallow dish or bowl. In another bowl mix together grated parmesan cheese and bread crumbs. Dip chicken into egg, then into bread crumb mixture to coat.

In large skillet heat oil over medium high heat. Add coated chicken and sauté for about 8 to 10 minutes on each side, or until chicken is cooked through and juices run clear.

Pour tomato sauce into 13x9 lightly greased baking dish add chicken and top with slice of Monterey jack cheese and bake for 20 minutes
