Appetizer/Tomato Roasted Garlic Crostini

Ingredients

  • 1 head garlic
  • 1 tsp olive oil
  • 1 1/2 cup finely chopped plum tomatoes
  • 2 tbsp chopped, fresh basil
  • 1/4 cup chopped green olives
  • 1 tbsp balsamic vinegar
  • 1 french bread baguette, thinly sliced
  • Cooking spray
  • Basil Leaves

Preparation

Step 1

Preheat oven to 350 degrees
Remove white papery skin from garlic head (do not peel or separate from the cloves). Place garlic on aluminum foil. drizzle with olive oil and wrap with foil. Bake for one hour; cool 10 minutes. separate cloves, and squeeze to extract garlic pulp into a small bowl. Discard skins, and set garlic aside. Raise temperature of oven to 375.
VCombine tomatoes, basil and olives in a medium bowl, and season to taste with salt and pepper; set aside.
Lightly coat both sides of bread slices with cooking spray; arrange in a single layer on a baking sheet. Bake for 5 minutes or until lightly toasted.
Spread 1 side of bread with garlic and top with tomato mixture using a slotted spoon. Garnish with basil leaves. serve immediately.
