Ingredients
- 1 cup whole wheat pastry flour
- 1/2 cup wheat germ
- 1 tsp baking powder
- 3 eggs, beaten
- 3/4 cup honey, warmed
- 1/2 tsp vanilla extract
- 1 cup chopped walnuts
- 1 cup chopped dates
- 1/2 cup shredded unsweetened coconut
Preparation
Step 1
Preheat oven to 350 F. Oil a 9-inch-by-9-inch pan.
In a large bowl, stir together the flour, wheat germ, and baking powder.
In a separate medium-size bowl, mix the eggs, honey, and vanilla. Add to the flour mixture, stirring well. Stir in the walnuts, dates, and coconut until evenly distributed.
Spread the batter in the prepared pan and bake for 35 to 40 minutes. Cool; cut into bars.
