Ingredients
- 1 1/2 cups whole wheat flour
- 1 tbsp baking powder
- 1/2 tsp ground cinnamon
- 1/4 tsp ground nutmeg
- 1/2 cup honey
- 1 egg
- 2/3 cup mashed pumpkin
- 1/3 cup milk
- 1/2 cup safflower oil
- 1/2 cup raisins
- 1/2 cup pecans or sunflower seeds
Preparation
Step 1
Preheat oven to 400 F. Oil enough cups in muffin tins for 15 muffins or line cups with paper baking cups.
In a large bowl, combine the flour, baking powder, cinnamon, and nutmeg.
In a medium-size bowl beat the honey, egg, pumpkin, milk, and oil. Add to the dry ingredients and stir until flour is moistened.
Stir in the raisins, and pecans or sunflower seeds.
Pour batter into muffin cups to two-thirds full. Bake for 20 minutes. Serve warm or cool with Lemon-Honey Butter (recipe in collection).
