Back-to-School Brownies

Want a great back-to-school treat? How about deep chocolate with a hint of cinnamon? Whip up a batch of these scrumptiously moist brownies. This recipe makes a generous supply, using healthy grains. Enjoy some now, then freeze the rest in individual portions for a lovely lunch treat.

Ingredients

  • 3/4 cup whole wheat flour (or spelt flour)
  • 1/4 cup soy flour
  • 3/4 cup cocoa
  • 2 tsp cinnamon
  • 2 tsp baking powder
  • 1/2 tsp salt
  • 4 eggs
  • 3/4 cup Splenda
  • 1/2 cup agave syrup or fructose
  • 1 1/2 cups unsweetened applesauce
  • 1 tsp vanilla
  • 3/4 cup (1 1/2 sticks) butter, melted
  • 2 cups nuts

Preparation

Step 1

Preheat oven to 325 F. Spray or butter a 9-by-13-inch baking dish.

In a medium bowl, mix together the first 6 ingredients. Set aside.

In a large mixing bowl, beat eggs with a whisk. Add Splenda, agave syrup, applesauce and vanilla. Beat in the melted butter. Add dry ingredients, beating with a large spoon to combine. Stir in nuts.

Spread mixture into the baking dish and bake about 40 minutes, or until a knife inserted in center comes out clean.
