Baked Potato Soup

Ingredients
- 4 medium baked potatoes
- 2 slices bacon
- 1/2 c chopped celery
- 1/2 c green onions thinly sliced
- 1 (14-1/2oz) can chicken broth
- 1-1/2 c milk
- 1 garlic clove pressed
- 1/2 t salt
- 1/4 t pepper
- 1 c sour cream
- 1/2 c shredded cheddar cheese

Step 1
Remove skins from baked potatoes. Coarsely mash potatoes. In 4qt casserole cook bacon over medium heat until crisp. Remove bacon to paper towel to drain; crumble and set aside. Reserve 1/2t of bacon drippings. Chop celery, slice onions. Add chicken broth, milk potatoes, celery, onions, garlic, salt and pepper to drippings in pan. Bring to a boil. Reduce heat and simmer for 10 minutes. Stir in sour cream and reserved bacon. Sprinkle cheddar cheese on top before serving.
