Black-eye Pea Salad

Ingredients

  • 2 c. leftover black-eye peas,* drained
  • 1/2 red onion, chopped
  • 1 gr. bell pepper, chopped
  • 3 gr. onions, chopped
  • 1 clove garlic, minced
  • 1 pint cherry tomatoes, quartered
  • 4 oz of bottle zesty Italian dressing
  • 1/2 - 1 tsp ground cumin
  • 1/4 - 1/2 c. chopped fresh cilantro

Preparation

Step 1

In a large bowl, mix together black-eyed peas, onion, green bell pepper, green onions, garlic, tomatoes, zesty Italian dressing, and cumin. Cover and chill in the refrigerator approximately 2 hours. Toss with desired amount of fresh cilantro to serve.
