  • Sauce:
  • 4 Chicken Breasts (or use chicken tenders)
  • 2 Sleeves Ritz Crackers
  • 1/4 tsp. Salt
  • 1/8 tsp.Pepper
  • 1/2 Cup Milk
  • 3 Cups Cheddar Cheese, shredded
  • 1 tsp. Parsley Flakes
  • 1 Can Cream of Chicken Soup
  • 2 Tbs. Sour Cream
  • 1 Tbs. Butter

Step 1

Crush Crackers. Cut chicken breasts into 3 large pieces. Pour milk, cheese, and crushed crackers into 3 separate bowls. Toss salt and pepper into crackers and stir around. Dip each piece of chicken into the milk, then into the cheese (pressing the cheese into the chicken), then into the crackers, also pressing them into the chicken so it is well coated. Spray a 9 x 13 inch baking dish with vegetable spray, then place the chicken into dish. Sprinkle with parsley flakes and cover with foil. Bake at 400 degrees for 35 minutes. Remove foil and continue baking for an additional 10-15 minutes or until edges begin to brown. In a medium saucepan, mix the cream of chicken soup, sour cream and butter until nice and hot. Spoon this sauce over chicken when you serve.
