Ingredients

  • 1 lb. firm, ripe pears, peeled, cored and cut into cubes
  • 1/3 cup sugar
  • 3 Tablespoons water
  • 12 ounces frozen puff pastry, thawed
  • 1 large egg, lightly beaten
  • 6 cups vegetable oil, to deep fry
  • 1/2 cup apple preserves (jam)
  • 1 Tablespoon white rum
  • 2 Tablespoons confectioners' sugar, to dust

Step 1

1. Place the pears, sugar, and water in a medium saucepan over low heat. Simmer, stirring often, until the fruit is softened, 10 to 15 minutes.
2. Roll out the pastry on a floured surface to 1/4-inch thick. Use a 3-inch cookie cutter to cut out disks. Brush the edges of half the pastry disks with the beaten egg.
3. Place a little of the pear mixture in the center of each of the disks. Cover with the plain disk, pressing down on the edges to seal.
4. Heat the oil in a deep-fryer or deep saucepan to 365 degrees (190 degrees c).
5. Fry the fritters in batches until golden brown, 5 to 7 minutes each batch.
5. Remove with a slotted spoon and drain on paper towels.
6. Heat the apple preserves in a small saucepan. Remove from the heat and stir in the rum.
7. Dust the fritters with confectioners' sugar and serve hot with the apple sauce.
