Ingredients
- 16 oz pasta
- 1 lb ground beef (or turkey)
- 1 green bell pepper (chopped)
- 1 onion (chopped)
- 1 tsp minced garlic
- 14.5 oz can diced tomatoes
- 2 TBS chili powder
- 1 cup water
- 12 oz peas
- 12 oz corn
- 8 oz mushrooms (diced)
- salt and pepper to taste
- 4 oz grated cheese
Preparation
Step 1
Preheat oven to 350°
Grease 9x13 baking dish.
Prepare pasta as directed for al dente.
In large skillet cook beef, bell pepper, onion, and garlic until beef is no longer pink. Drain. Stir in tomatoes, chili powder, and water. Cover and cook on low for 30 minutes. Add peas, corn, mushrooms, salt and pepper. Cook an additional 15 minutes. Stir in cooked pasta. Toss well.
Pour 1/2 mixture into baking dish. Spread 1/2 the shredded cheese over pasta. Repeat layers.
Bake 20-30 minutes.
