Ingredients

  • 1 30 oz pkg. frozen hash browns, thawed
  • 1 16 oz. bag shredded sharp cheddar cheese, divided
  • 1 10 oz can cream of potato soup
  • 1 8 oz container of sour cream
  • 1/2 cup chopped green onions
  • 1/2 cup cooked chopped bacon
  • 1/2 tsp salt
  • 1/2 tsp pepper
  • 3/4 cup chicken broth

Step 1

In a large bowl, combine hash browns, 2 cups of the cheese, soup, sour cream, onion, bacon, salt, and pepper, mixing well.
Pour broth over hash brown mixture, stirring to combine.
Spoon into 13 x 9 inch pan. Cover, and refrigerate for up to 24 hours. Preheat oven to 350 degrees. Allow dish to stand at room temperature for 30 minutes. Cook, uncovered, for 45 minutes. Uncover, sprinkle with remaining cheese, bake for 15 minutes longer.
