Ingredients

  • 4 cups shredded unpeeled zucchini
  • 1/2 teaspoon salt
  • 2 eggs
  • 1/2 cup grated parmesan cheese
  • 2 cups (8 ounces) shredderd part-skim mozzarella cheese, divided
  • 1 cup (4 ounces) shreeded chedder cheese, divided
  • 1 pound itailian sausage
  • 1/2 cup onion
  • 1 cup mushrooms, sliced
  • 1-2 large tomatoe
  • small jar of sliced jalepenos
  • Any pizza toppings that you like

Preparation

Step 1

Place zucchini in strainer, sprinkle with salt. Let stand for 10 minutes. Squeeze out moisture.

Combine zucchini with the eggs, Parmesan and half of the mozzarella and chedder cheeses. Press in to a GREASED 13x9 inch baking dish.

Bake, uncovered, at 400 for 20 minutes.. Meanwhile, cook meats with onions (if desired) until no longer pink and drain.

OPTIONS:
with tomatoe sauce mix with meat
or
fresh tomatoes, slice and place layer on the zucchinin "crust"

Place toppings on to "crust'

Sprinkler with remaining cheeses; Bake 20 minutes longer until heated through.
