Roasted Clam Casino

Ingredients
- Casino Butter:
- 2 dozen littleneck clams
- 1/2 cup parmesan cheese, grated
- 1/2 cup bread crumbs
- 1/2 LB butter, soft
- 3 strips of bacon,
- 2 shallots, chopped
- 3 TB chopped parsley
- 1/2 cup parmesan cheese, grated
- 1 tsp salt
- 1 tsp ground pepper
Preparation
Step 1
Steam clams until they open (if they don't open throw out). Let cool.
Remove clams from shells. Reserve 1/2 half of the clam shells and wash them.
Place clams back into shells.
Sweat bacon on paper towel in the microwave until slightly crisp. Allow bacon to cool and chop into small pieces.
For Casino Butter:
Place butter, bacon, shallots, garlic, parsley, parmesan cheese, s&p into a food processor. Pulse until all is combined.
Spread butter compound onto the clams. Sprinkle with bread crumbs.
Place under broiler until bread crumbs brown. Serve!
