Cream of Peanut Soup

  • 1/2 cup butter, melted
  • 1 cup celery, thinly sliced
  • 1 medium onion, minced
  • 2 Tbsp. flour
  • 2 qts. chicken broth
  • 1 cup creamy peanut butter
  • 1 cup light cream or evaporated milk
  • 1/4 cup fresh parsley
  • 1/4 cup coarsely chopped peanuts

Preparation

Step 1

In 3-4 qt. saucepan, melt butter, add celery and onion. Cook until lightly browned, stirring constantly. Stir in flour. Blend well. Gradually stir in chicken broth. Bring to a boil. Stir in peanut butter. Simmer 15 minutes. Just before serving, reheat over very low heat. Stir in cream. Garnish with parsley and chopped nuts.
