Pasta Shells Florentine

Ingredients

  • 16 jumbo pasta shells
  • 1 pkg frozen spinach, thawed and drained
  • 6 oz low fat shredded mozzarella
  • 1 c low-fat cottage cheese
  • 1 egg white
  • 1 T grated Parmesan
  • 1/4 tsp ground nutmeg
  • 1 (16 oz) jar spaghetti sauce

Preparation

Step 1

Cook shells until al dente. Drain and rinse.

Combine spinach, mozzarella, cottage cheese, egg white, parmesan and nutmeg. Fill each shell with mixture.

Pour 1 c spaghetti sauce into a 8x12 inch baking dish, spread evenly. Place shells in pan. Spoon remaining sauce over shells.

Cover with foil and bake at 375 for 30 min.
