- 2/3 cups water or milk

Bring a large amount of salted water to boiling in a 4 qt. dutch oven. Meanwhile, in a medium bowl, stir together the flour, parsley, salt, and nutmeg.
In antoher medium bowl, stir together eggs and water or milk; add to dry mixture. Stir with a wooden spoon until a dough forms (dough will be sticky).
Place the dough on a cutting board and using a buttered table knife, scrape small pieces of dough into the boiling water. Or, place the dough in a colander and press the dough throught the holes of the colander into the boiling water. Cook, stirring occasionally, until spaetzle are tender but still firm, allowing 7-10 minutes if using the buttered knife mithod or 5 minutes if usin the colander method. Drain well and serve.
(If desired, melt 2 tbs butter in a large skillet ove medium heat. Add half of the cooked spaetzle; cook and stir for 3-4 minutes or until golden. Remove from skillt; keep warm. Repeat with remaining butter and spaetzle.)
