Ingredients

  • 3 lbs chicken
  • 1 t salt
  • 1/4 t pepper
  • 2 qts water
  • 1 egg
  • 3 c flour
  • 1 1/2 t baking powder
  • 1 1/2 t salt

Preparation

Step 1

Cook chicken in 1 qt water until tender. Cool and remove chicken from bones. Dice chicken and add back to broth that has been strained. Combine broth with remaining water to equal 2 qts. Add chicken, salt and pepper and boullion if needed to taste.

Sift dry ingredients together and add egg and enough broth to make dough. Knead on floured area. Roll out very thin and cut into 1" x 5" strips and add to simmering broth. Cover and simmer 20 minutes until cooked.

Add enough flour, milk and butter to thicken and taste good.
