Ingredients

  • 1 can tomato paste
  • 1 tsp ground oregano
  • 1/2 tsp salt
  • 1 tsp pepper
  • 4 breasts, bone and skin removed chicken breast
  • 2 cups pasta sauce
  • 1 clove garlic
  • 16 oz shredded mozzarella cheese, part skim
  • 1 tsp olive oil

Preparation

Step 1

Sauté garlic (onion optional) in olive oil. When golden brown add, tomato paste, pasta sauce, oregano, salt and pepper. Bring to a boil. Place on medium heat.

Take the chicken breasts and tenderize with a meat tenderizer, pounding them until thin (tip: spray clear wrap with non-stick spray and wrap chicken before tenderizing for quick clean up and no "sticky" trouble).

Season chicken with salt and pepper. You can also sprinkle a little garlic powder and parmesan cheese if you like.

Place chicken "crusts" on greased baking sheet. Top with sauce mixture.

Sprinkle with mozzarella cheese and top with anything else you enjoy on your pizza.

Bake at 350 °F (175 °C) for 30 minutes or until chicken is cooked through.
