Ingredients

  • 6 tbsp unsalted butter
  • 1 cup packed brown sugar
  • 1 cup orange puree
  • 3/4 cup peanut butter, smooth
  • 2 tsp pure vanilla extract
  • 2 large eggs
  • 1/2 tsp salt
  • 3/4 cup oat bran
  • 1 cup Flour Blend
  • 3/4 cup semisweet choco chips

Preparation

Step 1

Preheat oven to 325. Butter or spray only the bottom of a 9x13 inch baking pan. Lightly dust with flour.

In a saucepan over medium low heat, melt the butter and brown sugar. Remove from heat and allow mixture to cool a bit. Once cool, whisk in the orange puree, peanut butter, vanilla, eggs, and salt. Add the oat bran and Flour blend and mix until just combined. Mix in the choco chips, then pour the entire mixture into the prepared baking pan.

Bake for 30-33 minutes, until a toothpick inserted comes out clean. Allow to cool completely in pan before cutting into approximately 2" squares.

Keeps for a week in the refrigerator, covered tightly.
