Ingredients
- 2 Tbls butter, softened
- 1/3 cup packed brown sugar
- 1 egg
- 1/2 cup mashed ripe banana
- 2 tbls unsweetened applesauce
- 1/2 tsp vanilla
- 3/4 cup flour
- 2 Tbls whole wheat flour
- 1-1/2 tsp ground flax seed
- 1 tsp ground cinnamon
- 1/2 tsp baking soda
- 1/2 tsp ground nutmeg
- 1/8 tsp salt

Step 1
In a large bowl, cream butter and brown sugar until light and fluffy. Add egg; beat well. Beat in the banana, applesauce and vanilla. Combine the remaining ingrediwnts; add to creamed mixture.
Transfer to two 5-3/4-in. X 3-in X 2-in. loaf pans caoted with cooking spray. Bake at 350 degrees for 25-30 minutes or until a toothpick inserted comes out clean. Cool for 10 minutes before removing from pans to wire racks.
