Ingredients

  • 2

    Tbls butter, softened

  • 1/3

    cup packed brown sugar

  • 1

    egg

  • 1/2

    cup mashed ripe banana

  • 2

    tbls unsweetened applesauce

  • 1/2

    tsp vanilla

  • 3/4

    cup flour

  • 2

    Tbls whole wheat flour

  • 1-1/2

    tsp ground flax seed

  • 1

    tsp ground cinnamon

  • 1/2

    tsp baking soda

  • 1/2

    tsp ground nutmeg

  • 1/8

    tsp salt

Directions

In a large bowl, cream butter and brown sugar until light and fluffy. Add egg; beat well. Beat in the banana, applesauce and vanilla. Combine the remaining ingrediwnts; add to creamed mixture. Transfer to two 5-3/4-in. X 3-in X 2-in. loaf pans caoted with cooking spray. Bake at 350 degrees for 25-30 minutes or until a toothpick inserted comes out clean. Cool for 10 minutes before removing from pans to wire racks.
