Ingredients

  • 1 lb. split peas, rinsed
  • 4 medium carrots, cut into 1/2" pieces
  • 2 medium parsnips, cut into 1/2" pieces
  • 2 celery stalks, cut into 1/2" pieces
  • 2 cloves of garlic, finely chopped
  • 1 large onion, chopped
  • 1/2 tsp. thyme
  • 2 ham hocks ( about 1.5 lbs total)
  • salt and pepper to taste

Preparation

Step 1

In slow cooker combine, peas, carrots,parsnips, celery, onion, garlic, and thyme with 6 C, water. Add ham hocks and cook covered until the meat easily pulls apart, about 4-5 hours on high, 7-8 on low. Transfer ham to plate. When cool enough to handle, shred meatm discarding skin and bones. Stir meat back on soup along with salt and pepper.
