Sweet Potato Casserole

Ingredients

  • Alternative Topping:
  • 28 oz can sweet potatoes, drained and mashed
  • 1/4 c packed brown sugar
  • 1/2 tsp salt
  • 1/2 tsp cinnamon
  • 1 egg, beaten
  • 1/4 c milk
  • 11 oz can Mandarin oranges, drained
  • 1 1/2 c mini marshmallows
  • 1/2 cup packed brown sugar
  • 1/3 cup flour
  • 3 T butter, softened
  • 1/2 cup chopped pecans

Preparation

Step 1

Combine all but oranges and marshmallows; whip until light and fluffy. Fold in oranges and 3/4 c marshmallows. Spoon into greased 6 qt baking dish.

*If topping with marshmallows:

Bake at 350 for 20 min. Top with another 3/4 c marshmallows and return to oven until light brown.

*If using Alternative Topping:

Mix sugar and flour; cut in butter until mixture is coarse. Stir in pecans. Sprinkle over sweet potatoes. Bake at 350 for 30 min.
