Ingredients
- 1 lbs boneless pork loin
- 1 medium onion, diced
- 3 carrots, diced
- 3 cloves garlic, minced
- 1 can chipolte chile in adobe sauce, chopped
- 2 15 oz cans cannellini beans, drained and rinsed
- 1 28 oz can diced tomatoes
- 3 Tbs tomato paste
- 1 1/2 tsp dried oregano
- 1 tsp ground cumin
- 1 tsp salt
- t tsp ground black pepper
- 1/4 tsp each of ground cinnamon and cayenne pepper
- 1/4 cup chopped cilantro

Step 1
Trim excess fat from pork loin and cut roast in half. Combine everything else except cilantro and put into slow cooker, mix up.
Cook 5 hrs on high, or 8 hours on slow.
After done, shred pork and serve on warm corn or flour tortillas and garnish with cilantro.
