Ingredients

  • 1 lbs boneless pork loin
  • 1 medium onion, diced
  • 3 carrots, diced
  • 3 cloves garlic, minced
  • 1 can chipolte chile in adobe sauce, chopped
  • 2 15 oz cans cannellini beans, drained and rinsed
  • 1 28 oz can diced tomatoes
  • 3 Tbs tomato paste
  • 1 1/2 tsp dried oregano
  • 1 tsp ground cumin
  • 1 tsp salt
  • t tsp ground black pepper
  • 1/4 tsp each of ground cinnamon and cayenne pepper
  • 1/4 cup chopped cilantro

Preparation

Step 1

Trim excess fat from pork loin and cut roast in half. Combine everything else except cilantro and put into slow cooker, mix up.

Cook 5 hrs on high, or 8 hours on slow.

After done, shred pork and serve on warm corn or flour tortillas and garnish with cilantro.
