    eggs, beaten

    cups mashed bananas (about 4 bananas)

    8oz can crushed pineapple, with juice

  • 1

    tsp vanilla

  • 1

    cup chopped pecans

  • Frosting:

  • 1

    lbs cream cheese, softened

  • 2

    sticks butter

  • 6

    cups powdered sugar

  • 1

    tbls bourbon

  • 2

    tsp vanilla

  • 1

    cup chopped pecans

Directions

Oven to 350F Lightly grease 3 8inch or 9inch pans. Combine flour, sugar, baking powder, salt, cinnamon, baking soda and nutmeg. In a separate bowl, whisk together eggs and oil. Add the bananas and pineapples with juice. Combine eggs and flour with spatula. Add vanilla and pecans. Divide the batter evenly between the pans. Bake for 25-30 minutes. Remove, cool. Frosting: Combine cream cheese and butter until light and fluffy. Slowly add sugar and beat until incorporated. Add vanilla and bourbon. Layer: Cake, frosting, pecans, cake, frosting, pecans, cake, frosting, pecans.
