Ingredients

  • 1-3 1/2 pound boneless pork loin roast
  • 2 tbsp. Dijon mustard
  • 2 tbsp. chopped thyme leaves
  • 1/2 tsp salt
  • fresh thyme or rosemary

Preparation

Step 1

Preheat oven to 350 degrees
Put pork on greased rack in roasting pan
Roast uncovered for 2 hours or pork registers 155 degrees F
roll pork over about 3/4 of the way thru cooking so browns evenly
