Southern Crock Cooker Chicken

Ingredients

  • 4 pounds boneless skinless chicken thighs
  • 2 medium onion, thinly sliced
  • 1 1/2 cups water
  • 1 (16-oz.) bottle barbecue sauce (your favorite)
  • 1 cup chopped onion
  • 8 burger buns

Preparation

Step 1

Place half of the thinly sliced onion in a slow cooker; add chicken and water; top with remaining onion and barbecue sauce. Cover and cook on LOW for 8 to 10 hours or on HIGH for 4 to 5 hours. Drain liquid from slow cooker. Transfer chicken to a cutting board and remove excess fat. Chop chicken coarsely and return it to the slow cooker; add barbecue sauce and chopped onion. Cover and cook on LOW for 4 to 6 hours. Serve chicken and some juices on burger buns. For truly Southern fare, add your favorite slaw in the buns.
