Ingredients
- 1 4 lb. chicken
- 3 tablespoons of flour
- 3 tablespoons of olive oil
- salt and pepper
- 1 cup of small onions
- 2 cups of mushrooms
- 4 ounces of bacon diced
- 2 garlic cloves crushed and minced
- 2 ounces of cognac
- ½ teaspoon of thyme
- 1 bay leaf
- ¼ cup of chopped parsley
- 2 cups of Beaujolais wine
Preparation
Step 1
1. Preheat the oven to 375.
2. Cut chicken and flour pieces.
3. Heat olive oil and sauté chicken pieces 4 minutes each side.
4. Season with salt and pepper. Take out the pieces.
5. Add a little more of oil and add onions, mushrooms and bacon.
6. Cook for 5 minutes. Add more salt and pepper.
7. Add garlic, chicken pieces, and cognac and set aflame.
8. Add remaining ingredients, wine, more salt and pepper.
9. Bake in the oven for 35-40 minutes.
10. Serve with noodles or rice – enough for 4 persons.
